Wings Per Basket: What Crowding Actually Costs You
A 5.8 qt air fryer holds ten pieces in a true single layer, not the sixteen the capacity rating implies. Past that, each extra piece adds roughly 45 seconds and costs Crackle Rating, and past about 160% of single-layer capacity the underside stops browning and starts steaming.

Ten pieces in a 5.8 qt air fryer. Six in a 3.5 qt. Thirteen in a 7 qt. Eight in a 4L deep fryer, fourteen in an 8L, about twenty-eight in a 15L countertop unit. Those are single-layer numbers, and single layer is the only load that produces the result the appliance was sold on.
Crowding is the variable behind most wing failures and almost nobody publishes it, because it's unflattering to capacity claims. A quart rating describes volume. Wings don't care about volume; they care about how much of each piece is exposed to moving hot air or circulating oil, and about how far the temperature falls when a cold load goes in.

Capacity on the Box, Capacity at the Rack
Manufacturers quote total chamber volume. A 5.8 qt basket will physically swallow two pounds of wings, and the manual isn't lying when it says so. It just isn't telling you what happens to them.
Single-layer capacity is a different number: the pieces you can lay flat with a finger's gap between them and nothing riding on top. For wings that generally works out at 40-50% of the volume-rated load, because wings are awkward shapes that pack badly.
There's a second and worse gap on oven-style units. A 26 qt air fryer oven advertises three racks. Run three racks of wings and the middle one browns unevenly no matter how often you rotate, because airflow from a rear fan is never symmetrical top to bottom. Two racks work. Three is marketing.
The Load-Recovery Log
Piece counts are for a 3.0 oz two-joint wing segmented into two roughly 1.5 oz pieces. Drops are taken at load with the appliance stabilised at setpoint beforehand. Crackle Ratings are taken at the pull.

The 160% column is what a load you talked yourself into actually tastes like, and no amount of extra time recovers it. Read the drop column against oil or air volume and the pattern is obvious: mass buys stability. Eleven litres of oil absorbs a full basket of cold chicken and barely flinches. Two and a half litres takes a 68°F hit and needs five minutes to come back, by which point the wings have been sitting in sub-320°F oil long enough to go greasy.
That's the honest case for a bigger fryer, and oil capacity is the one spec worth paying for. Everything else on a home fryer is a lid and a timer.
The 100 / 130 / 160 Rule
At 100% of single-layer capacity everything works as advertised. At 130% you've got occasional overlap, the appliance still recovers, and the result is a wing that's good rather than very good. Somewhere near 160% a threshold gets crossed and the failure stops being gradual.
The threshold is contact area. Once pieces touch along their length instead of at a point, moisture leaving one wing has nowhere to go and condenses on its neighbour. You've built a steam pocket inside a dry-heat appliance. Tops still brown, which is what makes it so deceptive coming out of the basket — the wings look right and the undersides are pale and slick.
The Crackle numbers show the shape of it. From 100% to 130% costs about 1.5 points. From 130% to 160% costs another 2.2. That's not a straight line, and it means the last few wings you squeeze in are far more expensive than the first few.
Deep Fryers: Oil Mass Is the Whole Story
A litre of oil holds roughly half the heat energy of a litre of water per degree, which is why fryers recover more slowly than people expect. Add cold chicken at maybe 40°F into oil at 375°F and the energy that has to come back is substantial, and it comes back through an element rated for a domestic outlet.
The rule of thumb worth keeping: no more than 1 lb of raw wings per 2.5L of oil per drop, and wait for full setpoint before the next batch. On a 5L home fryer that's 2 lb, or about fourteen 1.5 oz pieces.
There's also headroom to respect. A full basket of wet wings foams hard for the first fifteen seconds, and oil filled past the max line will climb the pot. Fill to the line, never above it, and lower the basket slowly instead of dropping it — wings carry more surface water than most things you fry.
Air Fryers: Check the Underside, Not the Top
Every diagnosis on a basket air fryer starts by turning a wing over. Tops brown from radiant heat off the element and from air sweeping the surface. Undersides brown from air passing up through the perforated basket floor, and that path closes the moment pieces sit tight against each other or against the wall.
Two habits fix nearly everything. Leave the centre of the basket emptier than the edges, since airflow near a rear or top-mounted fan is strongest at the perimeter. And shake with intent — lift the basket, tip it back and forth twice, then re-spread, rather than just rattling it.
Dual-basket units are genuinely better for wings than a single basket of the same total volume, because you get two perimeters instead of one. Nine pieces per basket, eighteen total, is a comfortable load for most 8-10 qt dual models and gives more even colour than a single 8 qt drum ever will.
Racks and Sheet Pans: Airflow Instead of Recovery
Ovens and smokers barely have a recovery problem in the fryer sense; a 425°F cavity loses heat when the door opens but the pan and rack hold theirs. What they have instead is a circulation problem, and the wire rack is the fix.
Wings laid directly on a sheet pan cook their undersides in their own rendered fat, which is frying without any of the benefits. A rack lifts them about half an inch, lets fat drain and air move underneath, and is worth roughly 1.5 Crackle points on its own. Twenty-four pieces on a half sheet with a rack is a full load; thirty-two is crowding, and you'll see it as pale patches where pieces touched.
On a smoker, spacing does double duty. Wings need smoke contact on every surface, and pieces packed shoulder to shoulder come out with pale untouched bands where the neighbour sat. Twenty pieces per 300 square inches of grate is a sensible working density, and rotating the rack at the halfway point evens out the hot corner every smoker has.
The Verdict Strip
Three possible answers for any load: run it as a single layer, tolerate one overlap, or split the batch. Here's where each appliance class lands.
