Chicken Wing Cooking Temperature and Time: Six Methods, Logged at Full Load
Deep-fry at 375°F for 10-12 minutes, air-fry at 400°F for 22-26, roast on a rack at 425°F for 40-58, or smoke at 250°F for an hour and finish hot. Every one of those numbers assumes a full load and a 3.0 oz wing. Change either and the time moves further than most charts admit.

Fried wings finish in 10-12 minutes at 375°F. Air-fried wings need 22-26 at 400°F. A rack in a convection oven at 425°F wants 40-46 minutes, a conventional oven closer to 50-58, a smoker an hour at 250°F plus a hot finish, and a grill about half an hour on the indirect side before it ever sees direct heat. Those are the headline numbers and they're the least interesting part of this page.
The interesting part is what they were recorded against. Every figure in the log below comes from a full load rather than a photogenic half-basket, with the piece weight stated and the clock stopped at the plate instead of at the pull. That distinction changes the answer by three to six minutes on most methods and by nearly ten on a smoker.
Wings have also grown. A retail wing that averaged around 2.4 oz fifteen years ago now routinely runs past 3.5 oz, which means a timing copied out of an older source is cooking a bird that no longer exists. There's a second table for that.
What a Half-Empty Basket Hides
Drop six wings into a home fryer holding five litres of oil and the temperature dips maybe 20°F. Drop fourteen and it falls 50 or more. The oil doesn't care about your recipe; it cares about mass and specific heat, and cold wet chicken is a large heat sink relative to a domestic element rated at 1,500 watts.
Air fryers behave worse, not better. Opening the drawer vents almost all the heated air in the chamber, so the reading collapses 70-90°F before the food is even in. Recovery is fast because there's very little air to heat, but the first two minutes of the cook happen at a temperature nowhere near the setpoint.
So a chart that publishes one number per method is publishing the best case. The columns that matter operationally are the drop at load and the minutes to recover, because those two decide whether your second batch behaves like your first.

Crackle Rating is the audible-shatter reading on a 1-10 scale, taken at the pull and again ten minutes later, because a method that finishes at 9.0 and collapses to 5.0 is worse in a real room than one that starts at 7.6 and holds.

Any appliance taking more than five minutes to climb back to setpoint is telling you the load was too big, and the total time on that row no longer applies. Two rows deserve comment. The conventional oven is the only method here that never really recovers within the cook, which is why its ten-minute Crackle is the worst on the log and why it needs a pan rotation the convection row doesn't. And the smoker's carryover is double everyone else's, because you're pulling a piece that has been soaking in heat for an hour rather than one that spent eleven minutes in oil.

Re-Timed for the Wing You Actually Bought
Weigh six raw wings on a kitchen scale, divide by six, and you'll have a number somewhere between 2.4 and 4.2 oz. That single figure moves your cook time more than the brand of your appliance does. A 3.7 oz wing carries roughly 54% more mass than a 2.4 oz wing, and heat has to travel further to the bone through a thicker layer to get there.
Times below run to a 190°F pull at the same setpoints as the master log, at the same full loads.

If yours came from a club pack marked large or jumbo you are almost certainly in the right-hand column, and every inherited timing you've been using has been short. Notice the smoker column stretches worst. Low-and-slow methods amplify piece-weight differences because the temperature gradient driving heat into the meat is small, so a jumbo wing at 250°F can need half an hour more than a small one. On a fryer that gradient is enormous and the penalty is a couple of minutes.
Setpoint Is Not Cooking Temperature
The dial says 375°F. The oil spends the first three minutes of a full batch somewhere between 320°F and 350°F, then climbs back. Average that over an eleven-minute cook and the wings experienced something closer to 362°F. That gap is the whole reason full-load timings run longer than published ones.
Keep the drop under 40°F and the difference is small enough to ignore. Let it fall past 60°F and two things happen: the crust sets slowly, so more oil migrates into the skin, and the wing sits in the fryer long enough for the surface to go greasy rather than dry. That's the mechanism behind almost every greasy-wing complaint anyone has ever made.
Home fryers with 1,500 W elements simply cannot outrun a big load. If you own a 4L unit, eight pieces is the batch. Arguing with it costs more time than splitting does.
Where the Flip Belongs
Fried wings don't need turning at all; they need one stir at about the five-minute mark to break up the pieces that have welded themselves together in the basket. Everything else does need turning, and the timing isn't arbitrary.
Flip at roughly 60% of the total cook, not at the halfway point. The underside spends the first half of the cook against a rack or grate and browns by conduction as well as convection, so it gets ahead. Flipping late lets the top catch up instead of overshooting. On a 45-minute convection bake that puts the flip at about 25-27 minutes.
Air fryers are the exception: shake twice, at 8 and 16 minutes on a 24-minute cook. Each shake also re-seats the pieces, and re-seating matters more than turning does, because the contact points against the basket floor are where sogginess starts.
Carryover, and Pulling Before the Number
Wings carry over less than a roast because they're small and the bone conducts, but they do carry over. From a fryer expect 2-4°F, from an air fryer 2-3°F, from an oven 3-5°F, from a smoker 5-8°F.
A 190°F target therefore means pulling at 186-188°F from oil, and 187-190°F from a smoker aiming at 195°F. Pull at the finished number and smoked wings arrive on the tray past 200°F, at which point the meat starts sliding off the bone on the way to the table. Impressive in a photograph, awkward in the hand.
Rest is short. Sixty to ninety seconds on a rack, long enough for surface steam to leave and for the sauce not to slide, and no longer. The Crackle clock is already running.
Reading the Crackle Rating Column
A Crackle Rating is a 1-10 reading of audible shatter when a wing is bitten or broken. Ten is glass. Five is the line below which a wing stops being crisp and starts being merely cooked. One is wet paper.
Recording it twice is the point. Deep frying wins the pull column by a wide margin and then gives back nearly three points in ten minutes, because the crust is thin and the moisture underneath is enormous. Convection roasting starts lower and drifts down slower, since a 45-minute bake has already driven off a lot of the water that would otherwise resoften the skin.
Which matters more depends entirely on your service. Twenty people standing around a kitchen island get the fried wing at its best. A tray carried into a garden and left on a table for a quarter of an hour is better off roasted.
- 9-10: shatters audibly across the room. Fried, unsauced, straight from the basket.
- 7-8: clean crack at the bite, skin separates from the meat in a sheet.
- 5-6: firm, no snap. Still good. Most sauced wings live here.
- 3-4: yields without resistance. The skin has reabsorbed moisture.
- 1-2: soft and slick. Reheat it or don't serve it.
Keeping Your Own Log
Six entries per batch is enough, and after four or five services you'll have numbers for your own appliance that beat anything published, this page included.
- Average raw piece weight, from six wings on a scale.
- Piece count in the basket or on the rack.
- Lowest temperature reading after load, and the minute it returned to setpoint.
- Total minutes to the pull temperature you chose.
- Crackle at the pull and at ten minutes, on the 1-10 scale above.
- Anything unusual: frozen rather than thawed, sauced early, second batch on tired oil.
The habit that pays fastest is writing down the recovery time. Once you know your fryer takes four and a half minutes to climb back with fourteen wings in it, you know your realistic batch cadence for the night, and you can tell a room of twenty people when the second tray lands instead of guessing at it.
